Jan. 26, 2022

LITTLE ROCK — Hollie Sanders, AGFC assistant chief of education, is known for teaching people how to cook up delicious Dutch Oven recipes, but one of her favorite treats to cook isn’t something you’d look forward to having on your plate, unless you happen to be one of the millions of birds that call Arkansas home.

Barbellycoa tacos add Latin flavor to waterfowl

Jan. 19, 2022

STUTTGART — Greater White-fronted geese (AKA Specklebelly or Barbelly) are highly sought by waterfowl hunters because they are relatively easy to decoy, respond to calls, and provide table fare second only to sandhill crane in the waterfowling world. Although it is hard to beat a perfectly seared specklebelly breast, Arkansas’s long goose season provides ample opportunity to try various recipes, and who doesn’t love taco Tuesday?

Bushytail Boudin one more reason to enroll in Arkansas's Big Squirrel Challenge

Jan. 5, 2022

CASSCOE — With squirrel season in full swing until the end of February and the statewide Big Squirrel Challenge this weekend, Wil Hafner, facility manager for the AGFC’s Potlatch Cook’s Lake Nature Center in east-central Arkansas, has pulled a page from his wild game cookbook to pique the interest of hunters and home cooks alike. This time he’s giving up the goods on a bayou classic: boudin.

In keeping with the 34-year annual observance, we’ve compiled a few great ways to enjoy one of Arkansas’s most eligible sport fish.

JONESBORO — Arkansas is in the midst of deer season, and skillets are sizzling with the sound of a floured piece of backstrap cooking in grease. Alongside the backstrap will likely be a skillet of fried potatoes. As soon as the backstrap is done, a bit of flour will hit the grease, followed by some milk to brew up some gravy to cover the venison and accompany some biscuits cooking in the oven.

LITTLE ROCK — If Black Friday, Small Business Saturday and Cyber Monday all have your pockets looking a little bare, the Arkansas Game and Fish Commission has just the thing to lighten your holiday spirits. How about a free download of the AGFC’s cookbook “A Celebration of Conservation” to keep on your phone, computer or to print out at home?

Spicy venison soup warms winter-chilled bones

Dec. 4, 2019

LITTLE ROCK — It’s not that we dislike chili, tacos and spaghetti, but that seems to be the only thing consistently made with all the ground venison produced when you harvest a white-tailed deer. As much as Taco Tuesday is a staple around many houses, it’s still nice to throw a changeup to your tablefare, and this recipe from the Arkansas Game and Fish Commission’s cookbook fits the bill perfectly.
