Arkansas’s deer season is well underway with more than 120,000 deer harvested so far. Freezers across the state are filling with venison steaks, roasts and, of course, ground venison. Typically the loins and the tenderloins are the first cuts cooked up at home or camp, leaving a generous portion of ground venison at the bottom of the freezer. Wil Hafner, facility manager at Potlatch Cook’s Lake Nature Center in Casscoe, has a few tips and recipes to get more out of your ground venison.

LITTLE ROCK – Arkansas Hunters Feeding the Hungry will hold a special “freezer cleanout day” at the Bass Pro Shops in Little Rock, from 10 a.m. to 2 p.m., Sept. 24. Any hunter who wishes to donate processed meat or money to help feed needy families in Arkansas is encouraged to join in the event.

LITTLE ROCK — It’s not that we dislike chili, tacos and spaghetti, but that seems to be the only thing consistently made with all the ground venison produced when you harvest a white-tailed deer. As much as Taco Tuesday is a staple around many houses, it’s still nice to throw a changeup to your tablefare, and this recipe from the Arkansas Game and Fish Commission’s cookbook fits the bill perfectly.
